RECIPE: Pancake mix & beer pizza crust


I find it appropriate to follow up yesterday's Brooklyn post with an all-time New York favorite: pizza. This is a major favorite of mine. It's the ultimate garbage disposal meal, and it's scrumptious.

The swanky recipe:

1 c. pancake mix 
1 c. all-purpose flour
2/3 c. beer [we prefer the darker beer for the dough]
1/4 c. vegetable oil 
Sprinkle of parmesan and salt

Or a simplified, beer-less recipe:

Equal parts flour & pancake mix
Equal parts hot water & oil


Preheat the oven to 450° 

Mix the ingredients, preferably with your hands. The first recipe will obviously result in a more accurate consistency on the first go. The second recipe will involve some trial and error. You want to make sure that the dough will stick together but stays pliable.

Sprinkle some flour on the baking sheet, throw the dough down and form whatever shape pie you desire. Because I think out of the box I always go with a circle. If you are like the Brown Cow and are sans rolling pin, use either your hands or a can from the pantry.

Place that bad boy in the oven till it's slightly brown. Then, remove to decorate.

Now, load the crispy decadence with whatever your heart desires. Mine had loads of mushrooms, green peppers, spinach, tomato sauce and muenster cheese. The aim here is to load up. If you are a meat person, pepperoni's, sausage, that whole jam. If you are a vegetarian you are going to want tons of ruffage.

I topped mine with some crushed red pepper & bon appetit!
